Chef Rubber's Heirloom Mold Collections originates from turn of the century molds that were passed down from famed pastry chef Otto Eckstein. E.M. Berling also showcases these molds in the book Art in Confectionary and Pastry.


  • Silicone rods the bend and curve to free form shapes for casting sugar and chocolate for showpieces.

  • Silicone Frames are pre-determined shapes that can be warp and manipulated into other shapes to create unique parts and pieces for showpiece design.

  • Ganache frames are the exact size of the guitar bed and therefore used for casting the correct size slabs of ganache to be cut on the confectionary guitar cutter.
